An even easier iPhone 1.1.3 jailbreak for iPhone users
There's now an even easier method for jailbreaking iPhones running software/firmware 1.1.3 -- if you're on a Mac. Jailbreaking allows read/write access to the filesystem for the installation of unofficial third-party applications.
A new version of iJailbreak (0.5.3) acts as a graphical front-end for "ZiPhone," the previously documented package that allows easy jailbreaking of 1.1.3 iPhones under Mac OS X and Windows.
To use the software, download it, expand it, launch it, connect your iPhone and follow the on-screen instructions. The application also includes an unlock mechanism.
Unlike ZiPhone, however, iJailBreak does not include iPod Touch support.

Also, If something like the battery stops working can you simply restore it to 1.1.3 (or current firmware) and take it into an apple store to be fixed under warranty? Or is there some way they can tell it has been jailbroken?
finally. My only recommendations if you are currently are on iphone 1.1.3 with a bunch of webapps and contacts, bookmarks etc., is to first sync your iphone before running ijailbreak. you may have to sync twice, if you see backing up...in itunes, then you are backed up. check by going to itunes preferences, syncing and see the latest date of backing up your iphone. backing up is a way to get your data back on the iphone if jailbreak goes wrong (via ziphone on mac-i had to restore after ziphone). I just restored and chose my latest backup in 7.6. installed iJailbreak 0.5.3. worked flawlessly. all my stuff was there and the coveted installer app. not all apps will work. but got some i used on 1.1.1 and navizon(reason i used ijailbreak) is so much better now than the maps update in 1.1.3. almost like having a real GPS. for $25 not $200.
before ijailbreaking: I did get a get a connect to itunes slide for emergency screen after my restore and update in itunes 7.6. once i slid for emergency to get keypad, itunes recognized and restore process continued, ie. choose back up. I also got pairing error, but all i did was remove from dock and put back in.
oh yeah, you need leopard for ijailbreak to work.

I basically want to go to a vanilla-Apple firmware 1.1.3, then figure out if I want to jailbreak further later.
I'm afraid that I might brick my phone if I just try to Restore via iTunes and upgrade to 1.1.3.
Does anybody know of a "downgrade to non-jailbroken firmware" pathway?

You should be able to just attach your phone to iTunes, back it up one last time, and hit the restore button and that will wipe your phone and reinstall. Depending on what firmware you have on your computer you'll either have 1.1.1 or .2 or .3. Either way you should be able to upgrade to 1.1.3 without any problems. I had a 1.1.1 jailbroken phone before I upgraded to 1.1.3 and jailbroke again and everything was fine.

Finally restored to unjaolbroken 1.1.3.
