iPhone sync limitation to Microsoft Outlook Contacts

Apple has posted a Knowledge Base article indicating that. when Microsoft Outlook is configured for non-cached Exchange mode, syncing your Outlook Contacts to iPhone or iPod touch can result in only syncing about 536 Outlook contacts to the device.

The stated resolution is "Update to the latest version of iPhone software and iTunes."

I had no problem getting all my contacts to sync on my Outlook 2007 and iPhone 3GS. However, inside of each contact if I had more than two phone numbers, an E-Mail Address, Mailing Address, or any other information those did not sync over to my phone. How do I do that?
